Default HT question

I am new to the HDTV / Home theater scene, and I have a few questions. I bought my first plasma (pn50a450), and it will arrive on the 31st. I have Directv coming out on the 30th, and installing new Dish and HD DVR. I purchased 6' HDMI cable from Monoprice. I am trying to get "all my ducks in a row" before TV arrives.

Now for my questions...I am looking to get a receiver and speaker system, I have researched, and have come up with the following.

-speakers- Polk RM 6750 5.1 Home theater speakers

-Receiver- Onkyo sr 505 7.1
Onkyo sr 605 7.1
Onkyo sr 606 7.1

I am looking for the basic HT setup, and will eventualy buy a PS3 for gaming/blu-ray. Is there any advantage to any of the above receivers? I read about audio pass-thru, and have no clue what that means, but I want to use HDMI cables only, if possible. What do I have to do to get 7.1 out of the polks, or do I need 7.1 speakers, or just add a couple towers. Any help or tips would be greatly appreciated. Thanks in advance.
