It was HOW it was ended that pissed so many people off. Tonally off balance, characters changed considerably, and it was rushed. They wanted a sweet, sweet pay check for Star Wars, which subsequently didn't pan out as they were dumped from that project partly due to said backlash. However, ever since D&D ran out of George R. R. Martin material to crib from, the show had been in a death spiral. The issues didn't start in Season 8. They were only exacerbated.

They said the new show was canceled not Game of Thrones. The one prequel was canceled in favor of a different one.

The series would had to come to an end someday. It couldn't last forever. To me, I thought it was time for the show to come to its conclusion before it became redundant and repetitive like The Walking Dead. Game of Thrones came to its finale while the show was still on top, not waiting until it was declining and became worse. Also a lot of things could've happened behind the scenes that the public doesn't know about. Maybe some of the cast and crew members were getting tiresome of the production, wanted to make a change and move on, or just wanted to take a break. It's easy for the viewers to say they want more, but we're not the ones who's doing the work.

I love how people are constantly saying the show was rushed when the last 2 seasons covered a single (yet to exist) book.

This is irrelevant. The show can't "cover" something that doesn't exist. The books should be separated from "analysis" of the show. They have nothing in common since season 5.

Well it really doesn't matter now anyway because it's over. Game of Thrones was a great series while it lasted, and everything has to come to an end. Viewers couldn't expect for it go on forever, it would be unreal. There are no television series in the history of TV that lasted a lifetime. It just doesn't happen, which is why they have the complete series of all the TV shows available to purchase, so the fans could watch and enjoy them whenever they want.

It feels rushed because earlier in the series we spent like two and a half seasons just showing John Snow go North of the wall to meet the leader of the Wildlings, and then later in the series he goes North of the wall, fights an epic battle, gets saved by a Dragon and multiple other things, all in one single episode.

It's still 13 episodes instead of the usual 10. I think people would have been less pissed off if they had just called it Season 7 Part 1 and Part 2 which is what The Sopranos, Mad Men and Breaking Bad had called their "extended" final runs.

While it's true you cannot please everyone, that's not an excuse for how they bodged it. The pacing was truly terrible, and character actions weren't fleshed out properly. It's like a CliffsNotes version of a season, where they just skip all the details that are crucial to making it come alive. That's hardly the only problem with the season, but it's a pretty big one.
It's truly a shame the show declined so badly after so much enjoyment. I'm still looking forward to House of the Dragon (much more than I was to the Night King prequel, who would want that now?) - but GoT itself won't ever feel like a complete product because of how... not incomplete, but half-arsed it manages to feel at the tail end.

It certainly felt like they realized that they couldn't please everyone and they simply stopped trying. Though I think it's become apparent that the success of the show was in spite of the showrunners, not because of them. They coasted on the strength of the source material and some wonderful performances for years, with their own shortcomings only breaking through to the surface on occasion. But once they ran out of books and were forced to demonstrate their understanding of these characters, places, and stories, it became clear that they were way in over their heads all along. I don't think time will be kind to the show, in large part due to how badly they screwed up the last season. Any future reassessment will be just as harsh.

Vicious circle.

People aren't buying the season 1 4K for fear season 2-7 won't get released on 4K.
The remaining seasons aren't being in 4K due to current poor sales of season 1 in 4K.

I bought season 1 and I have no intention to buy seasons 3-8 on 4K. I don't even have them on Blu-ray.
