By far David Gilmour's Remember That Night: Live At The Royal Albert Hall. Great sound quality and a wonderful performance of his hits and some Pink Floyd classics.

I'll second The Last Waltz. Dave Matthews and Tim Reynolds at Radio City also has very nice sound quality. What I'm really looking forward to is Neil Young's big Blu-ray release in November. But, as others above have said, follow your taste.

One that hasn't been mentioned yet is the Rolling Stones' "Shine a Light". Although it's a documentary, the concert footage is fantastic. I had enjoyed many of the Stone's songs for quite awhile but I had never heard them "in concert". Absolutely blew me away and I have a new respect for their talent. They put on one heck of a show.
