The first time that diplodocus thumped his foot in Jurassic Park...that may still be the most wow scene I've ever seen in a movie.

Gollum. When I heard this character was going to be CGI I cringed - can't believe they pulled it off.

Pretty much most of LOTR was amazing from a visual standpoint. Everything looked like it was from a painting.

Ah...yes...The launch of Apollo 13 in none other than Apollo 13!

I remember FEELING the rocket blasting off as if I were right there next to it, and that perfect line after from Fred Hayes' little girl:

"Mom that was loud."

The sound design in that film rocked!

Day After Tomorrow : incredible wind/storm/weather effects, especially the tidal wave that hit NYC! and tornados in LA!

One of the first that comes to mind is the opening shot of Star Wars. Still awesome to this day.

And the entire Hulk vs. the army in Ang Lee's Hulk was simply incredible.

A few more:

The helicopter rescue in Superman: The Movie and the airliner rescue in Superman Returns.

All of the makeup effects in The Thing.

Dr. Manhatten in Watchmen. Such an incredible creation.

Nightcrawler opening of X2. Great scene and a wonderfully realized effect.

The entirety of Speed Racer.

And I still find all of the dogfight sequences in Independence Day to be pretty awe-inspinring. Especially on BD. The amount of detail that went into those wide shots of the battles is incredible.

2010 features some wonderful model and optical shots filmed in 65MM.

I'm a fan of the older FX (non CGI), like Jason and the Argonauts which simply look amazing!!

Using models like Star Wars, ID4 also is awesome.

Transformers 1 and 2, yea basically anytime there was a robot doing anything on screen.

The Mark II suit in Iron Man the first time he puts it on.

The 18-wheeler flipping and hospital blowing up in The Dark Knight if we are including practical effects as well.

The only one that has really made my eyes pop in the last decade was...

the shovel smilie in My Bloody Valentine 3D.

Everything else has been impressive, but not really that mind-blowing.
