Will my Profile 1.0 Sony BDP-S300 be able to play Profile 1.1 and higher blu-ray discs despite being unable to utilize the new higher profile features encoded on new Blu-Ray discs?

Yes. Any player, with the proper firmware updates, will be able to play any disc. They just won't be able to necessarily access all the special features.

EDIT: That is, any disc except for HD-DVD
