When you listen to 7.1 pcm tracks using a 5.1 system, do you lose anything or are the extra two surround channels spread between the two you have?

Depends on whether it's a discrete 7.1 mix. If it's matrix they are.

Seriously, even if it is discrete, I believe most players if they're set up correctly and decoding is done in the player will move that sound ifnormation into the surrounds for you
