I love fish, but admitedly don't eat enough of it. In part I suppose it's because fresh fish is expensive, and I don't like frozen fish or shell-fish. My favourite fish is Rainbow Trout, followed closely by Salmon, Haddock, Cod and Sole. I also love raw and/or pickled Herring.
My favourite way for cooking Trout and Sole is to pan-fry it lightly in a tiny bit of olive oil, plenty of butter and some granulated garlic. Although I am not a huge rice lover, I think pan-fried fish is a natural combination for it, as are asparagus, french green beans and toasted almonds. I use Haddock and/or Cod for when I make Fish 'n Chips, and I have an outstanding classic beer-batter recipe for it. For Salmon fillets I prefer the pan-fry method, but for Salmon Steaks I like to grill it. So what are your favourites? |
