Also, to the point of this thread, I have noticed that I get far more volume from my DVD Optical Digital connection to my receiver than from my HDTV. I think the connection type plays some role in that, or possibly the output stages on HDTV's are not as good as DVD players, etc. are.
I would generally not advice to hook it up like this. Use the HDMI to your TV only for picture and the optical out directly to the receiver. First, you don't add any additional delay and second, It's hard to guess what your TV will shove through your optical out when you feed it PCM over HDMI.
