There won't be two different 4K discs being stocked or sold. Just one version.

Yes but for the current price? Are you really that naive to think so?
Will Universal just give away their share to pay the royalties?

Despicable Me is advertised here at £24.99 - I think its pretty same priced as other UHDs. I think the UHD prices have so much "air" in them the studios can easily just keep the same prices with DV if they choose. As matter of fact I think DV could at best only help the studios and distributors to keep the ridiculous over pricing.

I believe technically HDR metadata in HDR10 or in DV should be a massive difference, but I think we must see it before we can tell how it works in real life, example how HDR plus works on Samsung quantum dot LCD TVs or how DV works on LG OLED's. But I don't think the implementation of metadata will make much extra expenses or then the systems would be pretty much doomed to fail before launch and those early DV announcements atleast IMO shows this is not the case.
