Give me some some time and what you are connected electrically and i could design something for you. The only problem I see is 120mm 120VAC fans are a little noisy and introduce noise (RFI and EMI) onto the neutral of the electrical system. It would be better to have them on a seperate ckt. Sometimes passive cooling is better in the long run compared to active cooling with fans.
Would it be possible to wire a couple of 12v case fans into a 9-12v plug in adapter like this as long as the amperage matched up?

Yes, as long as you don't overload the adaptor.
