What exactly do they say in them? All I know is that they talk throughout the movie.
depends on the person. generally you can expect discussion of the filmmaking process, how people were on set, why certain things were done, etc.

some go a step further. kevin smith movies are like a roundtable discussion with smith and stars from the movie talking about things on the set, how it was doing the movie, and just joking around. they are very very funny if you're into his humor. I hear the same about the Broken Lizard guys but I haven't heard them myself.

they can be very informative (though some, like anything, are bad) and entertaining, you can learn things from them (writing process from tarantino on true romance, miriad directorial tips from rodriguez on once upon a time in mexico and planet terror, bits of acting advice from depp in pirates 1... other favs are depp and del toro on fear and loathing in las vegas and richard linklater on dazed and confused and even slacker. and se7en is chock full of good stuff. fight club too), and some are just damn funny.

anyway, yeah I'm a HUGE commentary fan. I've bought many discs that I would have hesitated on but jumped at when I learned there was a commentary. it's like solid built in replay value.

I've actually been meaning to make note of which of my dvds/blus have commentary so I can check what percentage of them I've watched. maybe I'll get started on that soon.
