Firefly definately. Watched the series after seeing Serenity in the theater (yeah, I know I watched it backwards). Great series with a lot of potential.

Avengers: Earth's Mightiest Heroes. An Avengers series done correctly (let's forget the 90s abomination.....), and it was cancelled!? Had a huge fan base and was highly rated. The possibilities for season 3 (Civil War) would have been interesting. At least they wrapped the series up with an epic episode.

Rome. Two great seasons, and they managed to wrap it up, however there is so much more they could have done with the series.

I enjoyed the following:

Over There, Jericho, Chicago Fire, FlashForward, Terminator Sarah Connor Chronicles, Death Valley, Rome & Carnivale that all ended too soon imo!

HBO's Rome- I would have loved if it had been given more seasons. So the events in season 2 could have been spread out more.

Freaks and Geeks- I thought the show was really funny and could have gotten even better in time.
