Mulan was a Disney+ exclusive for several months, and that is getting a physical release (at least in the US and Canada - nothing yet announced for the UK). I'm sure Soul is going to follow the same release schedule:
  • Disney+ exclusive for 2-3 months
  • After Disney+ exclusivity, open digital sales for iTunes, Vudu, FandangoNOW, etc.
  • After a few months of digital-only sales, release physical media.
We just have to wait and see what Disney is planning to do with UK physical releases. Mulan is going to be the guinea pig, so keep an eye on what Disney does with that in the UK.
