S2 of SNW should take place in ~2259-2260, when Kirk is a Lieutenant Commander serving on the USS Farragut. From this time to being given command of the Enterprise as Captain in 2265 there's essentially no official events in Kirk's timeline/history. There's no reason they can't have him show up for an episode or two in association with the Enterprise, even if he doesn't actually serve on it. Giving Pike a reason to remember the up-and-coming officer is as good a storytelling excuse as any to bridge SNW with TOS.

In Kirk's time and beyond, Starfleet had no shortage of Commanders, so they were often punted about the fleet and other postings, taking command of smaller ships and locations that were of lesser importance than the more notable ones, but essential to Starfleet and Federation interests, as the territories expanded and more graduates and enlistees came out of the Starfleet training centers. In the novels, though continuity was pretty much non-existent between all but a few works, Kirk took command of a small cruiser after getting promoted to Commander and was accompanied by his friend, Gary Mitchell, as his second-in-command. Most likely, we'll see him on the command track in SNW and he'll show signs of being a reliable, if troublesome officer, by the time his stint in the season 2 episodes is over.

All I know is, just on a shallow, surface appearance level, VAMPIRE DIARIES boy looks NOTHING like William Shatner, whereas Chris Pine is at least able to evoke a Classic Kirk look. He better shock the hell out of me, because at first blush, it strikes me as really questionable casting.

Both Discovery and Picard failed to keep me as a viewer.
I am however willing to give SNW a shot and hopefully I will like that more, but I have no big expectations at all, given how intentionally divisive they're now making these shows. |

From what I was reading, the USS Farragut has the same basic design of the Enterprise and shouldn't be any different for Kirk being on board early other then being a phaser and targeting operator. What's the chances he'll be taking up the same role here?

The Farragut is said to be a Constitution-class starship, just like the Enterprise, though the registration designation has always been one or another. Originally, it was unclear as to what ship-class it belonged to, but the expanded continuity of supplementary media and such depicted it as a Constitution-class starship, which is now considered to be an official fact in the Trek lore.
