To answer your first question- you don't. It's displaying the input type. Since the PS3 decodes the audio and outputs it as LPCM, "Multich" PCM will be displayed. It's doing what it's supposed to do.

As to your second statement, that's up to opinion. That's why there are so many listening modes. I personally prefer "stereo"- I still get the Audyssey calibration that way and can still listen to 2channel. I don't like it matrixed out to the other speakers.
