There are some variables to consider, and there are critical pieces of information left out of your post that we will need to help you. Also, there is a really good link on this site titled Audio and the PS3. This should answer all your questions.

I can give you some of the highlights to help you troubleshoot. First off, you can only get TrueHD and DTS-HD MA if you send your audio signal via HDMI (you cannot use optical cables with the fat or the slim - it MUST be HDMI). Second, on your 60 gb PS3, set your HDMI audio to PCM (the fat PS3 cannot bitstream, only the slim can). Last, verify that your receiver is capable of receiving the signal through HDMI. The PS3 will actually decode the audio and send it in PCM format to your receiver. Your receiver will display something to the effect of LPCM or Multi-Channel - this is normal. You will see which codec is playing by pressing select on your PS3 controller. It should say TrueHD or DTS-HD MA on screen.

Oh, and make sure you select the HD track on the disc's setup menu (many discs actually auto-start with the lossy track). Also, you may have to get firmware updates for your PS3. Depending on when you last did this, early models of the PS3 did not have the ability to decode DTS-HD MA. This was addressed via firmware update.
