So, if i understand this device correctly, you just plug the TT into it and then run that straight to your computer?
The USB turntables are generally not well regarded. The electronics and ADC's aren't high enough quality to provide you with really good results. You can do better for not much more buy buying a good used table and cart, a phono pre-amp, good ones sell for as little as $100 and a good sound card, such as the M-Audio, which goes for another $100.

Transferring is definitely a daunting task. I've got >3,000 LP's, 1,500 45's and 4,000 78's. My strategy is to only transfer rare records that aren't available on CD or Rhapsody. It takes a minimum of 45 minutes per record. If you need to do some basic restoration you're looking at an hour or more.

What time I have available is normally spent on 78's. They require more extensive restoration efforts once transferred. I use software from DC Art, which is also used by libraries and other archive and restoration facilities, including the Library of Congress.

They key to a good transfer, no matter the source, is to start with a clean record. I have a DIY vacuum record cleaning machine, it's the only way to get them really clean.
