I personally do not notice a speed in loading times when playing games off the hard drive as opposed to the disc, but it definitely runs a lot quieter...
You still need the disc in the drive to start the game... This is done to prevent people from renting or borrowing their friends game and basically copying it... I'm on my third Xbox (by choice not RROD) and each one was an upgrade of the previous. I currently have the MW2 edition and with games installed to the harddrive it runs as quietly as if it is turned off. I only ever noticed the fans though on the Original 20gb Pro edition.
