Why is it that Universal Studio released Spartacus in the aspect ratio 2.20:1 while the O.A.R. for this movie is 2.35:1? Could someone explain this to me? The difference seems small, but, still, I find this annoying...

Spartacus was shot in Super Technirama 70, which has an aspect ratio of 2.20:1. It was a version of 70mm. The image was typically re-adjusted to 2.35:1 for 35mm exhibitions, and because the negative was 2.25:1 there was virtually no loss in the image.
