Well if you have either HDMI or Component cables you can go to Setting > Display settings > you can then change the resolutions to your preference by telling PS3 that you have either cable and then it will let you choose your resolutions, and since you think 720p is the better resolution than 1080i then you must disable 1080i by unchecking the box.
