These posts ultimately lead to the "Big Two" - Lord of the Rings and Star Wars. I usually stick with those, but don't expect we'll be seeing them anytime soon.

"Big 2" and studio exlcusitivity aside, I'd say: Willow, Batman (Tim Burton), Jurassic Park, Saving Private Ryan, Starship Troopers, Braveheart, Gladiator, ID4, Aliens, The Matrix, let's see what else...

I'd like remasters of Total Recall, T2 and Sleepy Hollow as well.
