Are the speakers(directors/writers) watching it on blu-ray or dvd? And is there a way to know which?

The older movies most likely DVD the newer ones, no way to really know.

They don't watch DVDs or BDs. They watch HD tape.

The older commentaries are made for DVD, for which they'll mention DVD.

sometimes they are'nt even watching the same cut of the movie your watching.
