Well, even with just 2 in SLI, you could still run multiple instances of Crysis. In fact, I don't really see what kind of games will ever require the full power of two GTX 690's. Even if the graphics of games look just like real-life, which we're almost at, two GTX 690's should be able to handle it just fine.
