If your panel can do 720p, select 1080i on the PS3. There's so little difference between the two, no one would know which one you're running unless you tell them. On the other hand, if your display is only 480p, the PS3 will hook up and display at 480p but Blu-Ray's wouldn't look any better than regular DVD's that's for sure.
