I might not be able to answer all of your questions (as I do not know the answers) but I can answer some...

As for hdmi vs. component, as long as you have a 1080i max resolution TV, you won't be missing out on anything with component as 1080P can only be achieved with HDMI (i'm pretty sure, but not 100%). I do not know anything about bluray movies only playing in 1080p HDMI in the future, but it seems that with a PS3, it will always be able to display the lower resolutions. This claim seems ludicris because what about all those 720p or 1080i sets?!?!?!Would BluRay completely abandon those prospective customers?

As for using optical audio, as long as you want to stick with 5.1 sounds as well as NON-HD sound you should be fine. If you have a 7.1 or higher or receiver that takes HD sound (PCM, DTS-HD) you might want to invest in running the sound through HDMI.

Also, one thing to keep in mind is DVD UPconverting. The PS3 can upconvert any DVD (non HDM/BluRay) to 720 or 1080 resolution. Problem is, due to copyright issues, it can only upconvert DVDs through HDMI (video). So if you were really set/interested in using this feature, this is something you also have to consider because it cannot be achieved through Component Cables.
