Just googled what you said, and you're right. Looks like the Steelbook's might be Fox's last releases.

Still, the 3D in Phantom Menace was supposed to be terrible according to the reviews I read.

Personally, I think they should just leave the first 6 films as they are now and bring 3D into the new trilogy.

Unlikely as already selling out. Sainsburys have sold out of their allocation of the original trilogy Steelbook and only have the prequel one still on sale.

Given almost 2 months until release will probably be a sell out everywhere by then.

Doubt it. Look at the existing full box set. I could have got it for £45 on release and I didnt for some reason assuming it would soon drop to £30... nearly 2 years? later and it never did - in fact its gone up if anything. On Amazon right now its £59. I cant think of any other very popular boxsets that have actually increased in price since release date.

I have been reliably informed that the steelbook versions will have further alterations made to them, this would make them the 2013 versions and different to the previous blu ray release.

I have been told there are 21 changes new to this release but I have not been told of the nature of those changes except one involves the conversation between C3P0 and R2D2 on the Tattoine surface in A New Hope.

Needless to say, I'll be sticking with the 2011 box set.

Then you have been reliably misinformed. Care to share your source?

Whoever they are, I'm afraid they are wrong - this is a simple repackaging job, like the rest of the Fox steelbooks.

Even if that hadn't been confirmed, if they were going to release new versions then it would be a wide release. Not a niche re-issue available in only a select few countries.

If these were re-editted discs Fox would have to get a new certificate from the BBFC. I did a quick check last night, and as far as I could see nothing has been submitted since 2012. Fox have started classified things due for release in may already, so they're cutting it fine. (Or more likely it's just a repackage...)

The key point though is that Lucas is out of the decision making loop, sure he may have input but it will be up to Disney &/or 20th Century Fox when the re-release the films.
As they both like money, and fans have repeatedly stated they wanted the original "theatrical" trilogy, hopefully it will happen in the not too distant future. It really doesn't matter who owns the rights to what, if there is money to be made it would be foolish to ignore the market.
