Despite it being 7 hours long, I can see them fitting it all on one Blu with no drop in image quality that anyone could notice. We're not talking about a feature length film here. We're talking about a mostly talking head doc, even the audio won't take up a ton of space I'd imagine.

Idk, if an actual movie like Lawrence of Arabia that is what, 4 hours long, can fit on a Blu and still look insane and sound great, I see a 7 hour doc doing just fine.
