I forgot to mention "Cliffhanger" and "The Rundown". It takes a couple minutes to get to the big scene in both, but they're each the highlight of the movies.

I personally love the opening of the movie "Van Helsing" I grew up watching all of the old horror movies and the opening sequence pays homage to a lot of those movies! Especially begining in BLACK & WHITE!!!!!
