I find myself watching the opening sequence to Blade Runner a lot (due to Vangelis's score and the miniatures).

One of these days, I'd love to make a film that opens like that.

I assume you're thinking of the first battle - storming the beach at Normandy. But that wasn't the opening scene. The first scene had the old man visiting the cemetery.

I love non-linear movies, the ones that start showing you the end scene or one somewhere down the middle of the film, and then proceeds to show you how the story got there, sometimes through a movie-long flashback. I think it's called in medias res. That makes for a super interesting opening scenes.

Movies such as:
-Inception
-Fight Club
-Forrest Gump
-Catch Me If You Can
-The Butterfly Effect
-Eternal Sunshine of the Spotless Mind

and a bunch of other films I probably haven't seen yet, or simply didn't come to my mind :P

Most of the ones I would say have already been mentioned (e.g., The Dark Knight, Saving Private Ryan).

But one that is actually pretty good and I don't believe has been mentioned is the Prince of Egypt. I love the score when the Statute just falls out of nowhere in the beginning.

My favorite opening scenes are:

Basic Instinct (unrated version)
Twister (DTS-HD 5.1 Master Audio, from the UK blu-ray release)
Xanadu (Colorful cinematography)

I like the Clerks opening a lot. It basically tells you the whole plot of the movie and you can basically feel how Dante is feeling right away.

The opening of Up is so powerful and heart drenching that really sets up the premise of the rest of the movie. Also the opening of Wall-E is very familiar is this sense, shows you how lonely the robot is.
