Out of curiosity do any of the cuts explain what happened to the 3rd Klingon D7 battle cruiser in the opening sequence?

That always drove me crazy. Thanks!

No offense at all intended toward you, but this is the kind of pedantic stuff that drives me nutty. It was destroyed off camera, same as the two you see. It's just odd to me to act like that's an error of some kind, just because the camera only shows two. Omission of obvious information isn't a plot hole IMO.

I remember in the initial press release for the Complete Adventure set that the SLV disk in it would not be re-released

So ideally if there was a steelbook re-issue, it'd be the 2021 theatrical cut disk and the DE

I took it more as the Complete Adventure contents would not be rereleased as the same set. Paramount's bread and butter is baiting little things over time and the more you hold out the cheaper and more complete you get it later. I bet at some point soon they will find the original sound materials and remaster the mixes for all these films. Though if the SLV cut doesn't come back out I will gladly take a Steelbook if they re-encode the theatrical cut disc.

I would have been ok with "Bet you wish you'd stood in bed," being cut. I also would have been ok with the whole "marshmelon" discussion being cut from Star Trek V (along with about half of the rest of the movie).

But as noted, the SLV was created for TV broadcast and the later VHS and there's several snippets of dialogue and such in it that weren't in either of other two cuts but frankly should have been in the DE at least. I'm very glad to have it on disc after all these years, but it won't be the one I go to for regular viewing.
Even though I think it's the weakest of the three cuts overall, the SLV does give some more context for Ilia's "oath of celibacy" line. The scene it's in is kind of awkward, so I understand why it was cut, but there are a couple of lines I wish they could have found a way to keep.

Not sure if this was in the script or not, but in the novelization of Star Trek VI, the "stood in bed" line is followed by Spock saying something like "Vulcans sleep lying down, Doctor." And Bones takes a second and then says... "Spock, that was actually funny."

I'm sure there wouldn't have been time to make that really work in the midst of a big action sequence, but it was a nice character moment that read well on the page.

As noted below, the novelizations add so much depth to the movie stories. I kinda wish they would write the script, then have an author make a novelization adding in some character stuff, then have a screenwriter re-do the script with the character stuff so the movie could show some of that kind of thing.

The novels add so much, and that's absolutely one of the scenes that should have been kept intact.

That's a lot of dialogue to cut from a sequence from any film.

It's because of the PTSD he gets when hearing the BONGS!, it takes him right back to that time he Pon Farr'ed and almost sliced up his best friend
