Prequels
Clarify/simplify the story, especially smaller things..... Was the signal a trace in Phantom Menace? Were the people dying? "Sifo Dyas" etc. You don't have to spoonfeed but they were needlessly complicated at times.

I would even add a short precredit scene to Phantom Menace. A bit like Lord of the Rings. Since it's the beginning, have it say what the force is, show the final battle of the Jedi defeating the Sith 1000 years ago (where the Sith turned on each other, with only one surviving to look for a new apprentice...). Show what exactly the prophecy is, and what balancing the force means.

Add the deleted scenes of Owen/Beru in Clones. And the original scenes of Padme and 3P0 on Tatooine. Plus show Obi Wan and Owen falling out in III about raising Luke..... Holding out hope for the Obi Wan show for that!

Add Qui Gon to Episode III (although IX does finally make me feel a little better about that)

Explain more clearly that Leia remembers her mother through the Force. Have Palpatine be behind Padme's death. It's been suggested that IS what happened, but if it is, again it's really not clear at all. Put in the Brother/Sister theme from Jedi after Luke/Leia are born.

Put the Imperial March in IV somewhere? Maybe add the scene of Luke and Vader at the beginning of Jedi, and the Empire almost blowing up Endor.

I don't even mind most of the SE changes but take out the "noo" out. I'd have preferred flashbacks to that! But really the scene was perfect how it was!

Sequels

VII Explain how this all happened! How did Snoke turn Kylo Ren with Luke, Han and Leia right there? (I guess Palpatine making him hear voices does explains that somewhat).... Let alone take over the galaxy. Being a clone of Palpatine doesn't really explain that. It does matter Kylo!

Last Jedi.... Add a post credit scene to with Palpatine's transmission that he's returned.......

One thing I'll give Rise of Skywalker is it handled Leia/ Carrie Fisher better than I thought possible, but still would have made things much easier and helped the story to just to rework Last Jedi and have Leia die there instead of Luke.

Rise of the Skywalker..... Stop hiding from from the prequels! Doesn't have to mean "fan service" but use the history! Force Awakens was fine mostly because it' was so "back to basics". Last Jedi actually does this nicely when Luke talks about Darth Sideous and the Jedi. Rise of Skywalker should have had the whole Saga come together! Jedi voices scene aside, it doesn't at all..... Duel of the Fates at least should have been there somewhere (that commercial alone gave me chills at the time. Lol,)

Somewhere in the three movies Anakin's ghost should have tried to warn Kylo Ren that worshipping Darth Vader was maybe not the best idea. Luke's ghost should have too actually ("See ya around kid"). I do like the scene with Han though, so maybe have them try and fail to get through to him before that.

The leader of Palpatine's secret fleet could have been a character from the prequels, since he talked about how he served him before. (Maybe that blue guy who works for him.... Or maybe Jar Jar!!!! Lol)

.It could have come up that it's not the first time 3PO lost his memory ("What do you mean "last time" R2? I don't know what you're talking about!"). And they could have had Coruscant or Naboo celebrating (the SEs did this but they did Cloud City too!). That planet Kylo Ren goes to is apparently Mustafar! But you'd never get that from the movie!

Kylo Ren should have been with Luke and Leia at the end (and maybe Anakin after Rey turns around, so all the Skywalker Jedi are there).

Sorry this got super long! I actually enjoy them all anyway! Imagine if I didn't!

Max Von Sydow should have been a jedi. The chance to hear him speak about the force mysticism was a big missed opportunity...

That would've been a pretty neat change, having him pull out his lightsaber in defense of Kylo's attack but is still ultimately killed -- would make him more interesting as a character and he would've died trying to defend the people around him. Much more potential substance and depth there.

Hear, hear. At this point, Dave Filoni is THE most valuable resource to Star Wars. Pay that man whatever he wants to continue on. Watching his roundtable talk about the symbolism of Duel of the Fates still gives me goosebumps.
