I've yet to use Cars as an example. I'll pro'ly do that next time for new friends who come over.
Sleeping Beauty blows me away. The color is ridiculous!

I've heard the Batman Begins BD is just alright?

TDK for the most part, also Baraka, Ratatouille (my first BD purchase!), and Wall-E.

I would leave that up to the person and choose a movie I know they like, if I have it.

Usually Top Gun.

I know that it isn't the highest rated Blu for PQ or AQ but friends my age (early 30s) have all seen it dozens of times and know what it looked and sounded like before Blu.

Opening scene on the carrier deck, now with 50% moar Kenny Loggins goodness.

After that I'll spin some TDK, KFP, Days of Thunder, Baraka, Ironman, etc.

Kung Fu Panda is great. i watched it back to back on standard dvd then blu. the biggest thing i noticed was Po's fur is white tipped on the ends. u don't see that on the standard dvd but on blu, it really stands out.

TDK, and the opening scene of Blade Runner, with the LA cityscape (comparing of DVD to BD). Ratatouille has been used, and my new favorite is most definitely WALL·E.

TDK - Batpod Sequence
Incredible Hulk - Either the daylight fight vs. the Army, or if I think they have the patience for it, the end battle vs. Abom
Casino Royale - Construction Site/Embassy Chase
Daredevil DC - Bar Fight
Spider-Man 2.1 - Extended Train Fight
Wanted - Pharmacy Shoot-Out into Car Chase

and for music, either anything from the NIN disc, or if I'm using Dave Matthews, 'Lie in our graves' or 'Crush.' I usually go towards 'Crush', because I find the solo in the middle of '...Graves' goes on just a little too long, and is somewhat repetitive.

For Demo I do the following:

Animated Video & Audio - Kung Fu Panda
Regular Video & Audio - Baraka,

For a showcase of an audio scene, I'll play Incredible Hulk; the scene where Bruce Banner is locked in the univeristy campus walk-way...

Lot's of great ideas here already...

I'd only add the "beach" and "ruins" scenes towards the beginning of Prince Caspian. People at my place have been astounded by the color and clarity.
