300 didn't leave anything out. Alot of characters were added, since the original graphic novel was very short and lacked a lot of dialogue.

The Hills Have Eyes (2006) is pretty faithful to the 1977 version except that the mutated freaks in 2006 were inbred freaks in 1977.

RZ's Halloween is an insult the Carpenters 1978 original.

LOTR trilogy is pretty faithful to the books as was The DaVinci Code.

While Stanley Kubrick's version of the Shining took some liberties with Stephen Kings book those liberties improved to overall story. There are just some things in the book that would not have translated well in the film version. Just watch the made for TV version and you'll see what I mean.
