It’s a well-known fact Hillenburg took a lot from Ren & Stimpy.

Is it factually correct that various processing techniques were utilized for this transfer (NR, edge enhancement, etc)?

Looks like same treatment they did to titles on BD to me. Sleeping Beauty, Pinnochio, etc.. cels filmed so should be grain, but instead clean, almost CAPS looking.

Cels shot with 35mm animation camera won't have grain similar to a live action film, right? The lighting conditions are controlled, for example. I'd expect the negative to be far better developed and consistently so.

Who can we reach out to at Disney Home Video? Maybe we'll actually find someone who worked on the 4K scan and subsequent transfer.

Aren't some of the shots of ships and vehicles 3D models? They look and move smoothly like digital effects compared to the animation. There's also water ripples and a handful of "magic" shots that surely have CGI in them as well. Also Disney apparently digitally removed a knee?

The quality varies throughout for a reason, it isn't because Disney is lazy and just upscaled a random half of shots from an older transfer.

Considering how short the priest was, some thought his knee looked like a boner.

Studio Ghibli did the remasters, Disney just distributed them.

Well, maybe it is better to say that they do not care about faithful restorations, but rather care about making everything look acceptable to the general consumer who does not care. At least they do not do 16:9 croppings.
If you ask the general population whether they'd rather have the original grain intact in 4K or a smoothed out look, more akin to how The Lion King looks in 4K, I think it's no surprise most consumers are going to go for the latter.

Why would you want other people to tell you what to do with your own money? No one can really make your mind up but yourself.

The Laughing Place review said while grain was removed from nearly every shot, there was no evidence of DNR washing away any details.

Flipped around tonight and this is why I don't own any Disney 2D classic on BD
Just terrible stuff as standard from Disney on their classics

Are you asking which version to buy? I personally would go for the Best Buy Steelbook. I picked it up yesterday, and it has really beautiful artwork drawn by Paige O'Hara. Not to mention you get nice artwork on the 1080P disc. I unfortunately don't currently have a 4K TV so I can't comment on how the transfer looks. I did watch a bit of the 1080P disc (planning on watching the entire movie later tonight.) and it looked beautiful on Blu-ray. I'd say at least on par, maybe even a bit superior to the 2013 Diamond Edition transfer. Hope this helps you out! Also here's an unboxing of all the different editions, this would probably help to decide.
