Have seen all the big film openings since 1975's Jaws (Star Wars, Empire, Jedi, Raiders, E.T, Blade Runner etc..). So I would say that I would have loved to see the opening of Casablanca at the Hollywood Theater in New York City in Nov of 1942.

These three are from the 60's and I was too little for movies,
but I saw most of the big hits from the mid 70's and later in the opening day

The Empire Strikes Back would be great, not knowing Darth Vader's reveal. Wizard of Oz must have been mindblowing. I'd probably also like to see Halloween and Jaws.

Easily Star Wars. It would have been such a mind blowing event, it was like nothing anyone had seen before. I love Star Wars and being able to experience it for the first time like that would be phenomenal.

[Show spoiler]Just to see people's reactions when it goes from a bank robbery movie to a flat out vampire movie. I've had this experience before. I was watching this and my sisters fiance was over the house and he started watching the movie with me. and when they came to the bar scene and the movie flipped he was just like WTF am I watching? lol
