Depending on the person I would use something along the lines of:

Ratatouille: Rat in the Wall, and the scene following it.
Sunshine: Any scene will do, but usually the one involving the final jump in the golden space suit.
The Fifth Element: Any scene will do.
The Incredible Hulk: Hulk vs Abomination (sound goes boom in ways I didn't know sound could go boom).
The Dark Knight: One of the scenes shot in Imax.
Wall-E: When Eva dystorys the ships, the spaceship take off or during the space dance scene.


What I have used is:
Ratatouille: Rat in the Wall, and the scene following it
and
The Dark Knight: Any of the scenes shot in Imax (probably the night scene where the tumbler is dystroyed).

Here's my list, some I use to show off PQ, some for AQ, and in most cases to show off both

The Incredible hulk - The scene at the college or the final fight
The Dark Knight - The Swat chase (specifically when the bad-pod ejects, and jokers truck flips)
Casino Royale - The torture scene (I don't think it shows off any PQ or AQ, but women always request it)
Die another Day - Ice palace Car chase
Cars - Lighting and sally's trip through the country to the old hotel
Wall-E - Any part from the begining before he goes into space
Iron Man - Final fight or his escape from the cave in the mark 1 suit
Dr No. - When they are evading Dr. No's men in the river at crab key (that water looks so real and blue you want to jump at the screen)
Transformers - The last 30 minutes specifcally Sam running with the allspark to the rooftop and Optimus and Megatrons fight, also the very last scene where Prime sends sends his message to all remaining autobots and Linkon Park plays (i guess you have to like that song though)
Batman Begins - Arkham break in, bat attack, and the tumbler chase (chapter 27 i believe)
300 - Any of the battle scenes
Band of brothers - Any battle scenes, the majority of episode 6 "Bastogne"
30 Days of Night - Any scene after it goes dark, something about the snow and the blood, its a visual delight

It's not a movie scene but the lossless DTS MA hidden track on David Foster & Friends BD turns an already entertaining concert into a straight reference quaility demo disc! That lossless track is, simply put, AMAZING! In particular Katharine McPhee (stunner!), Andrea Bocelli, Brian McKnight & Josh Grobans performances stand out! This is currently my #1 demo disc and my HT has never sounded this good!

Opening scene of QOS is perfect demo material. As well as any fight scene on Ip Man and Flash Point!

I love seeing/hearing the Transformers scene where Optimus locks up the brakes on the interstate while transforming. Beautiful. Jaw-dropping.

And I love the intro of Quantum of Solace, where it's just strings and quick visual flashes, and the sound of the cars slowly comes into it, and then it all just explodes into action and audio. Sorry, neighbors.
