Default HT Gear Setup

I'm in the midst of renovating my basement and I'm hoping to purchase gear next month but I am going to a HT store this weekend to start scouting out gear so I can start planning on how my HT will officialy unfold and how I'll need to wire it.

However, I don't know a thing about gear. I am looking to go the projector route and my budget will be about $5,000 - 7,000. I can bump it up to $8,000 if need be but I'd rather keep it around $7,000 if that's doable. I also live in Canada so that's all in CAN $$. If I can spend less and still get a great HT, then I'll do it. Even if you guys have US links of products, I can look them up here in Canada or hell, it might even be cheaper to ship from the states since our prices always suck.

I care more about video qualilty than I do audio (not that audio isn't importnat) so I would like to get a kick ass projector if I can. Here's a breakdown of what I want to spend.

Projector - $2500-3000
Screen - $500-$1000 (would love to spend less)
Receiver - $500-700
Sub - $500-700
Speakers - $1,000-1500 (Would like to keep it closer to $1,000)
New PS3 Slim - $300 (I have the bigger one and I might just bring it down from the family room to save money, will decide once I figure out main gear)

I know that doesn't add up to $7,000 but I figure cables and things I might not have thought about will be for the extra budget. I don't have to spend the full $7,000 but it's there if I have to.

I have to more reasearch but I'd love to get the 2:35:1 ratio on the projector so what kind of screen would I need. I have been reading a bit and the Panasonic AE3000 seems like a decent one and with the 4000 coming out, I figured it might drop in price or should I just wait & get the AE4000 since I see it will be $1999. Or is there an even better one to get. I will only be using this theater for movies & gaming & the potential hockey game, won't be watching TV on it.

My viewing distance will be roughly 9' so keep that in mind when mentioning screens and I want to hang the projector from the roof.

I'll also only be going 5.1 for the sound. The space isn't huge and it's a townhome so if I ever move to a bigger place, I'll look to go that route then.

Please also let me know what questions I need to be asking this weekend. They have like 9 showrooms setup so that's why I'm going, to get a feel for everything. Throw out any suggestions. I scoured these forums like a month ago but the basement has been taking longer than I thought and now I can't remember everything and don't have the time to go through every thread again. I also had all my links saved but got a new computer and didn't get them copied over.

ANY help would be appreciated. Any gear you can suggest will be appreciated. I know it's short notice but I would love a list to bring to the store this weekend so I can see what their prices are.

Thank you in advance for your help. I'm open to all suggestions and remember, if I can keep the price lower and still get a great HT, then I'd rather go that route ($5,000) but I will spend more if necessary (trying to keep it at $7,000). Is $5,000 still a decent budget?
