I'm sitting here watching what is usually one of my favorite shows. Actually this fact won't change that. But Psych is on NBC right now and on NBCHD, they've got it playing in 480i. I used to suspect that ESPN would do this because some of their games didn't look that good but I wasn't able to tell. Here, I'm positive. And the reason I bring this is up is because they at least stretch to the full 16:9, which is cool if they're not going to put it in HD.

Are you sure it's not just a glitch in your cable/satellite box? I have Time Warner and sometimes when I first turn the TV on, my HD channels will show as being 480i. They will reset properly if I change channels, though sometimes I have to switch to an SD channel and back to HD to get it to switch properly (this only occurs on start up, not everytime I change channels).
