Default Receivers Role In Video Processing?

I've always used a receiver for music alone but some people have been arguing about using the receiver as a pass through to up convert video. Some include chips such as the Farjouda etc. I'm fairly new to this concept and I don't understand why you just don't use the original source conversion such as a dvd to your plasma. is it to just split out your HDMI cables?

What is the benefit of this, how do you hook this up, and what receivers have the best chips for this?
