Title says it all, do any games have system updates on the
game disc itself?

Yes. It'll update automatically if it sees you're on older firmware.

My Lego Batman UMD had a firmware update on it.

The firmware is on the disc. I've seen it when people want to test out a brand new PS3 at the store with a game. The game told them to update first. Since the PS3 was not connected to the internet, the firmware clearly came from the game disc.
