Default PS3 Audio

Help,
I currently have my PS3 wired via hdmi direct to my tv, it seems the audio and video are going through this, i also have an optical cable plugged into the ps3 to my sony htfs1100 surround amp but i dont think this is doing anything as when i unplug it i lose no sound nor gain any when i plug it back in,
anyway on the ps3 settings i have set it hdmi and then automatic,
this only gives the recommend linear pcm 44.1 and linear pcm 48khz.

However when i have looked by doing this manually it obviously gives a long list of pcm linear outputs lots of 5.1 and 7.1's aswell, surely these should be coming up on the automatic list when i select hdmi, or do i need to select some of these manually from the list and if so which ones there are loads, i am really stuck,
as i am new to surround sound , it does appear that i am getting some sort of surround from the speakers with the settings i have at the moment, but i have no idea if this is correct.
