Delete any game installs and downloadable content / patches from Game Data Utility.

Do you mind redownloading them like the full games you already deleted?

Delete the installs first though.

A little late, but yeah that is all you really need to backup is the Save game data. Everything else you can delete. When you put in a game for the first time you will download the utility data and all patches. If you didnt delete the Pics or Vids you could have saved them to your flash drive then transfer to your computer and so on. The copy back over to the PS3 after the new HDD is in.

all the system settings are saved on the internal memory, at least that was my experiance as I didnt have to re-adjust anything. As long as you have your game saves back-up, you are good to go. Anything that was downloaded off the PS Store you can redownload also, as long as it is still available on the PS Store. And if you already paid for it, you dont have to pay again.

Some saves are copy protected, I kinda assumed that's why you were doing this.

I wonder if add-ons bought go directly into the game utilities folder. If so, deleting it would mean redownloading each one out of the 5 allowed redownloads per..? Correct me if I'm mistaken.

I think it's 5 machines (PS3/PSP) not 5 downloads so redownloading to the same PS3 shouldn't use anything extra up.
