ATI 4XXX series video card, Xonar HDAV1.3 sound card (available through Ebay in the US - only released in Tawain and UK), 8200/8300 series motherboard with onboard HDMI, or intel g45 series motherboard - these are the only ways of getting 5.1/7.1 sound through HDMI that I know of

If you mean just setting up 5.1 or 7.1 speakers on your PC, that's easy to do, and you just need a PC speaker system designed to connect to your sound card.

If you want to use home theatre speakers, those will require an amp -- and if you want lossless you'll need an amp/receiver that can accept 7.1 LPCM audio over HDMI along with one of the PC solutions prerich mentioned.
