Default I'm making sushi/sashimi tonight

I just picked up all the ingredients I need. I picked up some tuna steaks, crab meat, avacado, and cucumber for my first round of practice. I kinda wish I would of gotten some kiwis because I want to try a banana/kiwi roll (i'm experimenting BIG time today).

Anyone have any advice or horror stories?

Make sure your rice is sticky!! Sushi is pretty easy to make/roll, but cooking rice properly and knowing how to slice the goods is the most difficult aspect.

if you picked up real crab meat then you've already failed. like the others mentioned rice is the most important part and its better to keep it to a 3 ingredient limit. the fish, veggie (cucumber/shredded carrot/asparagus), and something else, anything i usually go with cream cheese over avocado. mix it up by doing rice on the outside of the nori and nori being on the outside of the rice.

Nah, i got the immatation stuff so i'm good to go

I've been reading about it a lot and I think I have a really good idea on what to do when I start tonight.

I literly eat sushi 3-4 times a week so I think in the next few weeks i'll be saving quite a bit of money

also i don't know if you are big on the "other sauces" but it adds a different texture and taste to your rolls, and spices things up if you will. i love making the spicy aioli sauce and doing wavy streaks like they do at the restaurant. if you want to be lazy u can do mayo and add sriracha to your heat level(rooster chinese hot sauce). u can google a better tasting recipe with more ingredients that you should have around the house also which is what i do. eel sauce is also nice.

Depending how sharp your yanagiba is, and how good your skills are with it, might turn out to be a horror story or a happy one

I defniently need a sharper knife

First batch of rice was slightly undercooked and thrown out

The second batch I rolled pretty well (cept I didn't get enough tuna/crab/avacado on the outside of the nori). Then I tried to cut it, and well, now that was just a disaster LMAO

Third batch I rolled perfectly and tried 3 different knives I had laying around. I finally found one that was "ok" and I was able to cut through the rolls with some practice.

I give myself a B-/B. This coming weekend i'm going to try all kinds of fun stuff .

The only place I would trust with Sushi here in VA - is Ukrops. I have had it numerous times and it is absolutely delicious! Nay an issue. I would be hesitant to buy Sushi at big box stores.

As far as restaurants, I don't know on that. Never been to any.

I hated Sushi for the longest time. I blame that on a terrible childhood experience with it. It was disgusting. However, a few years ago I decided to give it another try. Boy was I happy I did that. Freaking DELICIOUS! When I start my diet I am probably going to be eating mostly Sushi and the like. Great for you and tasty!

Anyone here ever try Fugu and is it worth the cost of it? I see some restaurants charging around $200 for this.

I recommend rice vinegar. 1/4 of rice vinegar along with your rice.

Bamboo rolling mats make the job a breeze. My wife is Japanese, and watching her and her mother roll is amazing. They don't usually put all the junk inside the sushi, and the rice they use Japanese Rose rice. I prefer Sashimi, I like the taste of the fish and consequently do not want to fill up on rice.
