Yes. Just set the PS3 to Linear PCM. The PS3 will decode for you DTS HD MA and Dolby TrueHD and send them to Ur receiver as PCM.

Yes, but you should use HDMI. if you use analogue out it will be two channels (since the PS3, as far as I know, only has left/right) and if you use optical it would depend on the settings, either it will be the lossy part(DTS/DD) or it will be 2channels PCM since optical can't handle more then that
