I know you didn't put Call of Duty 4 on the list, but I would like to second the post above mine.
It is so awesome that I sold my Xbox 360 and Halo 3 b/c I knew I would never choose to spend time playing it that I could instead allocate for COD4.

I've already got The Orange Box for PC which can't run UTIII to a decent level of quality so UTIII for PS3 as it's the next big thing™.
