You cannot get uncompressed PCM without the use of the HDMI cable from the PS3. HDMI to analog is also not available. Other connections, such as a digital optical cable will give you 5.1 DTS/PLII audio, but not Tru-HD.
..afaik.

Currently, the only way to get multichannel PCM or advanced codecs (lossless) are only through the HDCP enabled HDMI interface.

Some standalone players provide multichannel analog outputs.

You won't see a "HDMI to analog" cable per-se because HDMI is digital so you'll need something to decode and convert the digital stream to analog. It's not just a smaller connector which replaces standard analog jacks like the multi-port on a PS2 or PS3.

There are decoder/processing equipment which do take the HDMI signal and provide you with analog multichannel but it's cheaper to just get one of those new receivers that will do the job for you and give you more features.

+1, yeah if you want PCM or TrueHD (which trust me you do), then pick up an Onkyo 605 receiver ($399) and a decent set of front and center speakers to start...it'd be the best $$ you spend
