Default should I connect to my reciever or use audio out from my tv?

If someone would be able to answer this question about how to get the best audio settings from my setup. Right now I have:

ps3 connected to 30in sony wega with HDMI
RCA cables going from tv to Hitachi SR-2004 receiver
with both audio and video settings on the ps3 set to HDMI

SHOULD I HAVE:
ps3 connected to 30in sony wega with HDMI
component cable from ps3 with RCA cables connecting the 2 audio channels to the receiver
and switch the ps3 audio settings to component?

Does your receiver have an optical audio input and do you have a 5.1 setup? If so, you can get discrete DD 5.1 and DTS audio by connecting the PS3 directly to the AVR using optical. That would be the best connection for audio.

If you are only going to use analog stereo, it probably doesn't matter how you route the audio. However, the PS3 may be able to do Dolby Surround encoding if you connect it directly to your receiver rather than running it through your TV. Dolby Surround is an older method of folding a center and a mono surround channel into a stereo signal. I say "may" because I am not personally familiar with the PS3 settings.
