Default captions with audio

Hi. I am having trouble figuring this out for myself, and this is always the place to come when I am confused.
This issue is actually for my grandparents. Here is their setup: 70 inch Samsung DLP and an HD cable box from Mediacom. I will be adding a Blu-ray and surround to their home soon, but that has nothing to do with this issue.
I am trying to get the captions options to turn on on the TV.

1) The captions option is blocked out on the menu screen so that I can't even choose it to turn the option on. The TV booklet does not help. Any ideas?

2) if I finally get the captions on, will the DVR record a show and play back the captions?
