Attack of the Clones and Revenge of the Sith are great novels though!
Return of the Jedi has well, I won't spoil Obi-Wan's speach...
But ANH, TESB and RotJ are pretty much just the scripts adapted for novel form.
Only AotC and RotS are the ones that feel like real novels.
The Phantom Menace adds in one or two scenes.
I remember it gives Anakin a flash into the future while he is dreaming, but I can't remember what else it added.

There was more depth added to Qui-Gon's character for sure.

That usually happens cause there isn't a way to get thoughts or feelings out normally in a movie.
Inner monologues aren't really a thing in movies and never have been a part of Star Wars.

It starts the story with an Anakin scene unlike the film. It's got a scene where he meets an old spacer who had done some classified job transporting Jedi. There's this whole deal where Anakin & C3PO find an injured Tusken Raider, and then he goes to sleep and dreams about Sandpeople, and when he wakes up it's like in the dream and they're surrounded by the Sandpeople. At one point the book also goes into the history of the Sith a bit ( though it makes their origin more recent than the way it was in the 1990s EU ) and name-drops Darth Bane.

Correct. The transfers on the 2006 Letterboxed DVDs of the Original Versions of the Original Trilogy were sourced from the 1993 Video Masters created for The Definitive Collection LaserDisc set and the 1995 THX Mastered "Faces" Editions.

The Theatrical Cut of The Phantom Menace has never been released on DVD and Blu-Ray. So yes, the Japanese LaserDisc to this day still provides the best presentation of the Theatrical Cut officially.

In ESB I view Yoda as a vessel for Luke to have inner dialogue within himself. Yoda is there but he's only talking to Luke and getting Luke to learn about himself and question his mind less about learning to be a Jedi.

The conversation dialogue is more between Ben and Luke.

At that moment he'd become the monster he vowed to defeat. Paralleling what Obi-Wan said to Anakin ROTS. You were supposed to destroy the Sith not join them. The Emperor's arrogance comes into play. Luke had been extending his hand to Vader all this time. He sensed the conflict in Vader. He took a gamble that Vader would save him. Whether he knew or the Force willed it, the job got done.

That alteration introduced a goof because you see that part of the palace during Qui-Gon's funeral and the bridge isn't there.

I too find this to be an emotional scene that calls back on the brilliance of the well acted part of ROTS.
